Tasting Notes
Beautifully scented floral perfumed nose reminiscent of elderflower. The palate is a combination of exotic tropical fruits, green apple and hints of pear juice. This is an elegant dry wine with an attractive soft approach and clean crisp finish.

Vinification
A period of skin contact after crushing is mandatory to achieve the weight and
texture we desire. As a consequence of this approach we often see a pink hue
develop in the wine. Long cool fermentation conditions in stainless steel tanks
have allowed the elusive fruit characters of this wine to come through. A small percentage of the wine was fermented in French Oak barrels, this contributes complexity and structure.

The Vintage
A challenging vintage in the vineyards bought about by several significant rain events toward the end of the season. We did a lot of work keeping the canopies open to allow air flow and sun light on the fruit. This kept our crop clean and maximised ripening and flavour development. The season was cooler than 2010 resulting in a later start to harvest.

Food Match
The robust and assertive nature of this wine allows for some imagination when matching with food. Shellfish, poultry, and even veal will all work. Slightly sweet reduction sauces with a hint of orange will pair well with the dried fruit characters of the wine. The natural sweet flavour of scallops will compliment the succulent ripeness of the wine.
